Carob Pasta With Eggplant and Mushrooms

Recipe for delicious and highly nutritious vegan pasta

For a delicious carob pasta dish, you will need

  • Carob pasta
  • 1 medium eggplant (or 2 smaller ones)
  • 4–5 handfuls of mushrooms
  • soy sauce
  • olive oil
  • flax seeds
  • sesame seeds
  • black pepper
  • paprika powder
  • any other herbs/spices of your liking


  1. Start by slicing your mushrooms and eggplant(s) into even stripes.
  2. Place them in a pan with a drizzle of olive oil and a sprinkle of black pepper and paprika powder. Let them cook for about 12 minutes. Then, add around 2 tablespoons of soy sauce and let them simmer for about 8 more minutes.
  3. While they simmer, prepare your pasta by boiling it in water for however long the instructions say or according to your own preference.
  4. Once the pasta is ready, transfer it to the pan and stir everything together.
  5. You are now ready to serve. Sprinkle some flax seeds and sesame seeds on top, and you’re ready to enjoy!

But what is carob?

Carob belongs to the legume family. It is sweet in flavour, and some people describe it as caramel-like.

Carob was first grown in Ancient Greece and used for its many health benefits. Now, Portugal is the largest producing country, Italy comes second, and Morocco third.

It is now often used in baking, especially as a substitute of chocolate because of its sweet taste. Carob pasta is not that popular, however, you will find it in some health food stores and online.
