A recipe for delicious vegan tacos made in under 30 minutes.
This is my new favourite recipe! It requires minimal effort, and it’s full of flavour, high in protein and nutrient-dense! Keep on reading for an easy-to-follow recipe that will guide you through making the perfect plant-based tacos that everyone in your household will love.
~Makes two generous servings.
You will need
3 cups of water
1 cup of soy chunks
half a can of beans (~200 grams)
half a can of sweetcorn (~200 grams)
4 taco shells or tortillas
half an avocado
2 tablespoons tomato paste
half a teaspoon each; cumin, chili powder, garlic powder, oregano, paprika, and cayenne pepper
First, bring 3 cups of salted water to a boil, add in the soy chunks and cook based on the package instructions. That’s usually 10–12 minutes.
Remove from the heat, strain the soy and set it aside to slightly cool down.
In a rather deep pan, at medium-high heat, add two tablespoons of olive oil and the tomato paste and let that heat through. Next, add some water and mix with the tomato paste until it becomes a somewhat runny sauce.
You can now add all the spices and salt and mix well. Slightly press the soy chunks with your hands to remove excess water, and add those in with the sauce. Combine and let it simmer for about 10 minutes.
Add in the beans and sweet corn, put the heat on low and leave for an additional 5 minutes.
Now, slice up some avocado, cut the spring onions, and you’re ready to plate!
Fill your taco shells with the soy mixture, top with greens and drizzle some lime juice for a sour kick!
If you like, you can add some coconut yoghurt on top too!
